{i love coconut cake...for my 30th birthday...i was given not one...but TWO coconut cakes (separate celebrations)...they were divine! i need to make one...that means i need a celebration or a party...b and i wouldn't be able to (or i should say...we wouldn't let ourselves) eat a whole cake. check out the link for the recipe...my mouth is watering!}

when i need a really quick coconut fix i whip up this cake from paula deen:
1 box yellow or white cake mix
1 can sweetened condensed milk
1 can cream of coconut
1 tub whipped topping
3 cups coconut
prepare the cake mix as directed on the box and bake. poke holes in the cake, mix the milk and cream of coconut and pour it over the whole cake. after it cools frost it with the whipped topping and sprinkle with the coconut. refrigerate
scary that i know that by heart, but it's so easy and sooo good. even better the next day!
i can think of the perfect reason, place and time...sister reunion in LP in August. Lets add it to the list of things and we can all eat it together at our BQ!!!
